Well, the speedometer on the boat will give you water speed. The GPS will give you absolute speed. If you're in a boat drifting down river, your speedometer will show speed zero (barring any equipment error) because the boat is moving the same speed as a the water. The GPS receiver, however, will show your speed as the speed of the current, more or less.
It's also handy for aircraft, because dead-reckoning navigation with headwinds, crosswinds, and tailwinds makes things oh so interesting.
