Can I just e-mail someone's phone instead of text messaging them, so in a way I get unlimited test messaging?

yep. just send (if its a cingular customer) to [email protected] and it bills as a text. limited to 160 characters though. most carriers have an email address for phone numbers. i think t-mobile is [email protected] and verizon is [email protected]
