Clueless newbie with Nokia E50 wonders what Cingular/ATT data plan is best?

I may be going at this backwards, but I found the phone I wanted and bought it unlocked: Nokia E50.

I do not have a carrier but plan on signing up with Cingular/ATT.

Here's what I want to do with the phone: (1) phone calls (duh!); (2) receive POP3 email with PDF attachments (push would be nice but not necessary); (3) some very minor web surfing (like checking the looping radar weather map, maybe a Google search, etc.).

Here's what I do NOT want to do with the phone: (1) text messaging; (2) send photos; (3) VPN support not needed

I Googled this topic and came up with some messages which I really didn't understand. I'm trying to figure out which would be the best data plan for me, MediaNet, Smartmail, or a PDA plan.

Also, I was figuring to sign up with Cingular/ATT and select a "reduced price" phone and then just pop the SIM in my Nokia E50 and sell the "reduced price" phone on eBay. Is there anything wrong with that plan?

Finally, I think this plan gives me the luxury of selecting a phone which "goes with" the data plan that y'all suggest for me (MediaNet, Smartmail or PDA plan) and thus not get hassled by Cingular/ATT.

One more thing: are there any challenges in setting up this phone once I select a data plan and get a SIM or is it "plug and play?"
