Will there be an extended battery available for the vx-8100 that is the same size as the normal one, or will all available extended batteries make the back of the phone stick out more?

no, its going to be bigger size... i would say maybe 1700 MAH, where as the regular battery is 1000

I asked about this when I picked up mine at the Verizon store. The sales guy said the extended battery pack includes a replacement battery cover that would stick out a little more.
But that was from a sales guy who has only had the phone in his store for 1 day...

they always release extended batteries for phones. and obviously the longer lasting the battery the bigger the battery...
