Could be that maybe their phone only supports SMS (short) not EMS (enhanced). I think with the EMS, you can type for a pretty good while, while the SMS can only hold 160 characters.

When you are typing a text message, there is a place in the upper right-hand corner that has something like this: 56/160 which indicates how many characters you've used out of the 160 maximum (in the SMS case). Then, in the upper left-hand corner, there is something else that will look like this: 1/7. You should notice that once you've gone over 160 characters, the 1/7 will change to 2/7, and so forth.

Some people's phones only support SMS which means that they will not be able to get the whole message if it's over 160 characters total...

Also, I don't think inter-carrier EMS works. I haven't really tried it, but something tells me it wouldn't work.

I believe if you're sending a long EMS message to a phone that only supports SMS the EMS message will be broken into separate 160 SMS messages so that it can be received by the sms phone. Again, this is only on the VZ network.
