I don't know how to address this with Verizon, but I am sure that greed will prevail.
Though there is nothing out there yet about the Samsung i730 since only a few people have been investigating it, but there is about other products that do not interoperate.

My i730 sees my Linksys WEP-secured access points just fine on my WLAN. You just have to put the phone in Flight Mode first (i.e., turn off the 1xRTT/EV-DO radio). Touch the antenna icon at the top of the screen to access this function.
The phone CANNOT run the cell radio and WiFi at the same time - that's pretty much common knowledge at this point. That is to say, if you're on WiFi, your incoming calls go straight to voice mail. It is a design drawback, IMO, but the phone sucks down the battery like a sponge when in WiFi, so that would only get worse if the phone and the WiFi radios ran concurrently.

I have had no problem connecting to my home network when I dont have WPA enabled... I havent yet connected to it with WPA on nor have I tried very hard... I havent tried with WEP. BUT, most coffee shops etc that I have been to do not encrypt with WEP or WPA (9/10 at least that I've seen) so I'm not sure why you wouldnt be able to connect at such a place...I know I have successfully done so on a few occasions in the past.
Also, Dave is right that you can't normally connect with WiFi AND have the phone on at the same time...except... there are registry hacks around it...it WILL eat your battery I'm sure, but the possibility exists to do it and I guess if you've got the phone on the charger in your car or in your h...

3. Tap the "Wi-Fi Disabled" to enable.
4. Wi-Fi is now enabled; tap "OK" to close.
Once the Wi-Fi radido has been enabled, a Wi-Fi connection can be configured. To configue a Wi-Fi network, perform the following steps on the PDA:
