The manufacturer's info says the 8300 DOES support AAC

I just copied the following information from the phone info page:
The phone includes memory storage for MP3, AAC or similar music files, and software for playing that music.

So, given that Verizon wants us to buy music from them and that I have no intention of doing that (I much prefer MP3 or better yet AAC files)--how do we find where Verizon has hidden this capability?

You can enable mp3 playback by hitting ok+0 really quick...asks for a service code(000000) and it brings you to the programming menu....your wireless carrier will prefer you not change anything in this menu but the last option...labeled music setting...basically you need to have mp3 enabled...also when storing music on your t-flash card, you need to put it in the My mp3's folder after you format the card...also, you may want to change the default music folder on the phone (ie play button on front). Its default sett to play my music (not mp3) so you want to change it to this by going menu + 5(phone settings) + 2(shortcut key). Change the 5th one...play key to my mp3s.
